JULIUS BABILONIA - Designer
A New York City native, Julius Babilonia studied at Pratt Institute School of Architecture where he received his Bachelors of Architecture in 1990. At the start of his career he has been behind the scenes creating and taking the lead on design projects with some of the world’s most acclaimed designers such as Charles Gwathmey, Tony Chi, David Rockwell & Mark Zeff.

Within the space of Brasserie Cognac there is also an adjacent bakery/rôtisserie with a separate entrance, which will purvey throughout the day freshly baked croissants and baguettes, as well as café au lait and free-range roasted chickens. A cheese and charcuterie counter has also been designed which will showcase up to 40 varieties of fromages.

In 2006, Julius opened his own Boutique Design Firm focusing on all aspects of design for hospitality, residential, art direction, and branding.

Today, Julius Babilonia has conceived the interior and brand of Brasserie Cognac for the Serafina Restaurant Group. This is his fourth collaboration with the Serafina Restaurant Group also being the designer for Geisha, Serafina Broadway and Lollipop. When asked about his vision for the design of Brasserie Cognac, Julius says he wanted "a classic French Brasserie."

The authentic French Brasserie décor includes a number of unique features that will pique your imagination: Vaulted ceilings covered with tin, a spectacular zinc bar, an imposing baguette tower topped with round oversized clocks and a private Cognac dining room with beautiful painted Renaissance murals. The entire restaurant was carved and assembled in Paris and then shipped to New York City.

"I took an artistic exploration of an art driven, storytelling approach to create a memorable space with lasting appeal and intimacy," says Babilonia. "The romantic art and warm inviting interior surrounding the iconic bread tower, gives uniqueness to the Brasserie Cognac Brand."
